Viticulture and vinification
Dry wine . 13.50% Vol. Alc. . 100% organic Syrah . Violet, black cherry, plum and black olive . Completely balanced tannins and acidity and perfectly prepared to “sleep” in the bottle for a few more years . Black pepper and leather notes . Vinified with the whole cluster, an intact Syrah, without stemming, selected by hand in the vineyard. Natural fermentation in cement vats with wild yeasts. Aged for 18 months in large used French oak barrels . Powerful in the mouth
