Viticulture and vinification
100% Tintilla de Rota . 12.50% Alc. vol. Albariza barajuela soils, Jerez area typical limestone soils with a large amount of diatoms, fossilized algae that act as a natural organic fertilizer, a higher granitic component and laminated form, hindering root growth; the result, a very low yields of small grapes with thick skin . Grape treading, in Port Vintage style, for 5-7 hours, achieving a great extraction of color and tannins . Two gentle pumping over and 14 days maceration . Aging in Bordeaux area barrels of second and third use for 8 months and one more month in stainless steel tanks
Tasting notes
Bright ruby color . Pronounced nose with cherries and a touch of spices from the barrel . It is not the typical tintilla, here there is Atlantic minerality, a super elegant acidity in the mouth, and red fruit, especially fresh cherries

Raúl Moreno Yague, born in Seville, globetrotter, and adventurer, left Spain at a very young age to make a living in London restaurants, from there to the USA and Australia where – to sum up unfairly and quick – he ended up as a lecturer at The University of Melbourne after being a student there with a brilliant record . Awarded sommelier, collaborations with international wineries in Burgundy, Australia, Portugal, and Spain are just a few highlights of his resume . In 2017 he came back with his family to Jerez, where despite a first failed project, he gave shape to his current and successful one . As a curiosity, the name, Dark ‘N’ Stormy, is also the name of the unofficial cocktail of the Bermuda Islands. The story goes that it was a sailor who named it, because the mixture of dark rum and the lightness of the island’s typical ginger beer reminded him of the cloudy skies before the storms . We wonder if this has anything to do with our wine
