Viticulture and vinification
50% Sauvignon Blanc & 50% Sémillon . 12.00% Vol. Alc. . This white varieties coupage is typical in some Bordeaux areas, used to produce superior quality dry white wines . Pale yellow colour . Very complex nose, stone fruits, and, over all, secondary and tertiary aromas due to its fermentation and aging for 12 months in French oak barrels, as well as the contact with its lees for 2- 3 months in stainless steel . Very fresh and long mouthfeel, with a very marked and balanced
Tasting notes
A very special wine, perfect for storage, with its own personality due to:
– The vineyard’s location, Catalan Pyrenees, between 850 and 1000 m altitude
– Its vinification, being the undisputed main character, the stone presses from the 12th Century where another part of the fermentation is made
Winery things
Castell D’encus project has a clear experimental vocation led by the great winemaker Raül Bonet, working with various international varieties and some national ones, focused on making high-quality wines, aging capacity, within high acidity . To be highlighted, the history and wine tradition that surrounds the estate since Roman ages, and its terroir, 95Ha – 25 of them of beautiful landscaped vineyard – with high altitude, and continental climate with great diurnal temperature variation
